New restaurant brings authentic Jamaican food to downtown Trenton
TRENTON – The new Hummingbird Restaurant on Warren Street in downtown Trenton will celebrate its opening with an official ribbon cutting at 11:30 a.m. Wednesday, Feb. 17. The restaurant, located on 29 S. Warren St., serves authentic Jamaican food.
The Hummingbird is a family-owned restaurant. Partners Yvette Graffle-Cooper, Marjorie Barclay and Norman Francis all migrated to the United States in the 1980's and have made Trenton their home. What sets the Hummingbird apart is its original recipes and its use of seasonings that are imported from Jamaica, say the owners. “Our goal is to cater to every person that walks through our doors,” said Francis.
Mayor Douglas H. Palmer will join Hummingbird owners and Trenton Downtown Association staff tomorrow to cut the ribbon and officially welcome them downtown.
Barclay said the restaurant began as a hobby with the help of close friends and family. “As word got around, we discovered there was a desire for this type of food,” she said. “Jamaican food is unlike any other in the world. It is prepared well in advance to absorb all the flavors of natural spices grown in the Jamaican mountains.”
“We decided to open the restaurant to provide the people in the city of Trenton with a taste of Caribbean culture. (Our) dream was to open an establishment that would be rewarding, and to share our Jamaican heritage through the restaurant,” said Graffle-Cooper. “We believe there is a need for a diverse menu that will allow the community to experience the delicious authentic taste of the Jamaican culture. We believe that we have chosen an area that will embrace the heritage of great Caribbean food.”
The restaurant is open Monday through Friday from 10 a.m. to 8 p.m.
